Curried Zucchini Soup

2 lb. small or medium zucchini
1 c. vegetable broth
2 T. butter
1 tsp. curry powder
1 c. milk, half-and-half, cream, or sour cream

Wash and slice the zucchini very thin.
In a 2 quart microwave safe lidded dish, combine zucchini, broth, and butter.
Cover and microwave on high until very soft (7 to 10 minutes) stirring twice.
Placed cooked zucchini and broth in food processor or blender.
Add curry powder and milk.
Process or blend until pureed.

To serve cold, chil at least 3 hours.
To serve hot, return soup to cooking dish. Microwave on medium (50%) until hot but not boiling (3 to 5 minutes). Serve immediately.

Makes 4 cups/4 servings.

It reminds me of the days in the Great Northwest when all the guys at Boeing would be wandering the halls looking for a zuccini sink.
